PROFILO:

I am currently involved in projects dedicated to promoting extra virgin olive oil in the regions that represent my roots, Alto Garda and Gargano. I collaborate with local organizations, hospitality facilities, and tourism operators to introduce Italian and international visitors to the olive oil excellence of these two unique areas through guided tastings, sensory experiences, and visits to olive groves.

At the same time, I support initiatives related to the world of sailing, both on Lake Garda and in the Gargano, helping to enhance the connection between sport, nature, and gastronomic culture. The goal is to create experiences that combine territory, tradition, and quality, offering tourists and enthusiasts an authentic and engaging way to discover extra virgin olive oil and the stories behind it.

Sandro Franceschini

From 1988 to 1993 Sandro worked as a Buyer for “Despar Ceda Srl”. From 1993 to 1999 he worked as Category Manager for “Reggiana Alimentari”.

Since 1999 he has been Category Manager for “NORDICONAD”. From 2017 to 2020 he was Director for FIORFIORE CASH & CARRY Srl. From 2021 to 2022, he is Category Manager for CURACASA; from August 2022, he is the contact person for CONAD NORDOVEST Sales Management with the Localism Project.

Sandro has also been an ONAOO Professional Taster since 2012 and he is on the regional and national lists of olive oil experts.

Colliard Clarisse

Since 2020, she has been cultivating an olive grove in Puglia using entirely natural methods.
Using the expertise she has learned from local farmers and consolidated through her training at O.N.A.O.O., she covers the entire production chain — from land maintenance and pruning to harvesting, pressing, packaging and exporting — all carried out according to best practices.
In Switzerland, she offers her professional expertise to innovative companies in the olive oil industry, organises tastings and workshops.

Merily Peterson

Through my company Oliiv, I import, introduce, and sell high-quality extra virgin olive oil in Estonia, primarily through an online store and curated experiences. The website and e-shop provide the opportunity to learn more about each product and make informed purchases.

My activities include guided tastings, culinary pairings, and cultural events — from intimate gatherings at home to market events and musical evenings with olive-oil-based cocktails. The goal is always to spark curiosity and offer enjoyable and educational experiences centered on olive oil.

In a country where butter dominates the cuisine, there is great potential to show how olive oil can be part of a healthy, joyful Mediterranean lifestyle. For this reason, collaboration with chefs and cooking schools is becoming an important part of my work.

Looking ahead, I am particularly interested in engaging with the international olive oil community. Participating in global competitions — both as a taster and as a judge — is one of my aspirations. It is a valuable way to continue learning, contribute to quality standards, and bring new ideas and energy to the Estonian market.

Emily Lycopolus

Emily Lycopolus is an olive oil sommelier, professional olive oil taster, and author. She holds a degree in Life Sciences from Queen’s University, where she combined her love for science and discovery with a deep passion for food and flavors.

Additionally, she completed a master’s degree in cultural anthropology, transforming her kitchen into a space of exploration and learning. Her dedication to olive oil began in her husband’s family olive grove, an experience that marked the start of a career that now spans over 15 years. Emily has taught more than 500 culinary students and introduced numerous enthusiasts to the art of tasting and using olive oil. She is frequently consulted as an expert by retailers and food distributors for product category management, marketing strategies, and culinary pairings.

A faculty member at George Brown College, Center for Hospitality and Culinary Arts, Emily is also the author of eight cookbooks, which have earned prestigious awards such as the Gourmand and Taste Canada Awards. Her books have been presented at the Nobel House in Sweden, further solidifying her esteemed reputation in the industry.

Thanks to her expert palate, Emily shares her passion for olive oil with consumers, producers, and serves as a judge in international olive oil competitions.

In Victoria, Canada, where she lives, she organizes private workshops, advanced courses, and guided tastings with the goal of educating both culinary professionals and retail experts on how to best utilize and promote this precious ingredient.

I joined the ONAOO family in March 2023, when I attended the official technical course, and then continued with the advanced course, which concluded in November 2025.

In the future, I would like to strengthen my connection with the ONAOO family in order to share and promote the culture and tradition of extra virgin olive oil around the world.

The course is open to everyone, even to those without any experience in the oil sector.

Participants who pass the four selective tests receive a Certificate of Physiological Suitability for Tasting.
