Osman, who is passionate about olives and olive oil, grew up in Izmir, one of the major olive producing regions of Turkey.

He has extensive experience in blending and sensory evaluation in the tobacco business since 1996 and is currently a master blender and panel leader in a leading global tobacco company. In 2019, he decided to expand his sensory knowledge in olive oil with ONAOO’s technical course.

After two years of training, he obtained the qualification of Professional Taster of ONAOO in 2023. He provides consultancy to farmers and olive oil producers in Turkey and product experience in Switzerland.

Michelle Ruata

Michelle, born in 1997, graduated in Business Administration in the University of Studies in Torino. In 2020 passed the selective trials at the end of the Official Technical Course for Olive Oil Tasters obtaining the Certificate of Physiological Suitability for Tasting. In 2022, after passing the advanced course’s exam, she became a Professional Taster of ONAOO. Currently she has been working in the family olive oil mill, F.lli Ruata S.p.a., in Baldissero d’Alba (Cuneo, Piedmont).

Emily Lycopolus

Emily Lycopolus is an olive oil sommelier, professional olive oil taster, and author. She holds a degree in Life Sciences from Queen’s University, where she combined her love for science and discovery with a deep passion for food and flavors.

Additionally, she completed a master’s degree in cultural anthropology, transforming her kitchen into a space of exploration and learning. Her dedication to olive oil began in her husband’s family olive grove, an experience that marked the start of a career that now spans over 15 years. Emily has taught more than 500 culinary students and introduced numerous enthusiasts to the art of tasting and using olive oil. She is frequently consulted as an expert by retailers and food distributors for product category management, marketing strategies, and culinary pairings.

A faculty member at George Brown College, Center for Hospitality and Culinary Arts, Emily is also the author of eight cookbooks, which have earned prestigious awards such as the Gourmand and Taste Canada Awards. Her books have been presented at the Nobel House in Sweden, further solidifying her esteemed reputation in the industry.

Thanks to her expert palate, Emily shares her passion for olive oil with consumers, producers, and serves as a judge in international olive oil competitions.

In Victoria, Canada, where she lives, she organizes private workshops, advanced courses, and guided tastings with the goal of educating both culinary professionals and retail experts on how to best utilize and promote this precious ingredient.

Manuela Guatelli

Manuela was born in Genoa but spent her entire childhood in Imperia. She currently resides between Imperia, Shanghai, and Bangkok.

She represents the fourth generation of can makers and is actively involved in the “Guatelli Museum”, which houses the Family Collection of Italian Olive Oil Cans. This collection comprises over 6,000 pieces of olive oil cans and lithographic stones, which provide important evidence of the flourishing industry related to the oil trade that developed in the late nineteenth and early twentieth centuries.

In 2006, Manuela relocated to Asia with her husband and four sons. Despite the distance, she has not forgotten her roots. She has promoted the prestige of extra virgin olive oil, the history and flavors of Mediterranean cuisine beyond national borders through organizing Italian cooking classes, on-demand chefs and catering.

Her passion for extra virgin olive oil has its roots in her family; in fact, her father dedicated his life to the production of oil cans. My father, who crossed Europe every week to sell his cans, would return home on weekends with stories and anecdotes about this fascinating industry.

Having a global vision of the oil market, he could grasp even the smallest nuances of it, which made me want to be part of this wonderful world. In recent years, she finally managed to crown her passion by attending the ONAOO Course and becoming a Professional Taster in 2024. Manuela is actively engaged with several Italian associations abroad, promoting the history, culture, and art of extra virgin olive oil tasting on a global scale.

Merily Peterson

Through my company Oliiv, I import, introduce, and sell high-quality extra virgin olive oil in Estonia, primarily through an online store and curated experiences. The website and e-shop provide the opportunity to learn more about each product and make informed purchases.

My activities include guided tastings, culinary pairings, and cultural events — from intimate gatherings at home to market events and musical evenings with olive-oil-based cocktails. The goal is always to spark curiosity and offer enjoyable and educational experiences centered on olive oil.

In a country where butter dominates the cuisine, there is great potential to show how olive oil can be part of a healthy, joyful Mediterranean lifestyle. For this reason, collaboration with chefs and cooking schools is becoming an important part of my work.

Looking ahead, I am particularly interested in engaging with the international olive oil community. Participating in global competitions — both as a taster and as a judge — is one of my aspirations. It is a valuable way to continue learning, contribute to quality standards, and bring new ideas and energy to the Estonian market.
