Certified Tasting Sessions

An important milestone for officially becoming an olive oil taster is registration in the National List of Technicians and Experts for virgin and extra virgin olive oils.

After participating in the O.N.A.O.O. technical course and obtaining the Physiological Suitability for Tasting, an important milestone is registration in the National List of Technicians and Experts for virgin and extra virgin olive oils, maintained by M.A.S.A.F. (Ministry of Agriculture, Food Sovereignty and Forestry).

To join the List, you must also have a Certificate of Attendance at twenty certified tasting days (held in the manner and within the timeframes required by current legislation), issued by a Panel Leader. Registration on the National List allows you to join ministerially recognized Panels.

How are the twenty certified tasting days conducted?

  • The twenty certified tasting days are held in the twenty-four months preceding the date of submission of the application for registration; They are considered valid only if each includes at least two sessions with three organoleptic evaluations of the oil per session.
  • Guided by a Panel Leader, participants are asked to recognize the strengths, weaknesses, qualities, and organoleptic characteristics of various oils: a practical test in which they concretely apply everything learned during the technical course and further develop their skills, technical, and professional knowledge.
