Domenico was born in Messina in 1986 and graduated in biological sciences with a degree in nutrition.
He currently works as the chemical laboratory manager for oil quality control at ‘Manfredi Barbera e Figli SPA,’ one of the most well-known oil mills in Sicily. In 2021, he obtained his physiological suitability for tasting and in 2024 he obtained the title of professional taster O.N.A.O.O.
Emily Lycopolus is an olive oil sommelier, professional olive oil taster, and author. She holds a degree in Life Sciences from Queen’s University, where she combined her love for science and discovery with a deep passion for food and flavors.
Additionally, she completed a master’s degree in cultural anthropology, transforming her kitchen into a space of exploration and learning. Her dedication to olive oil began in her husband’s family olive grove, an experience that marked the start of a career that now spans over 15 years. Emily has taught more than 500 culinary students and introduced numerous enthusiasts to the art of tasting and using olive oil. She is frequently consulted as an expert by retailers and food distributors for product category management, marketing strategies, and culinary pairings.
A faculty member at George Brown College, Center for Hospitality and Culinary Arts, Emily is also the author of eight cookbooks, which have earned prestigious awards such as the Gourmand and Taste Canada Awards. Her books have been presented at the Nobel House in Sweden, further solidifying her esteemed reputation in the industry.
Thanks to her expert palate, Emily shares her passion for olive oil with consumers, producers, and serves as a judge in international olive oil competitions.
In Victoria, Canada, where she lives, she organizes private workshops, advanced courses, and guided tastings with the goal of educating both culinary professionals and retail experts on how to best utilize and promote this precious ingredient.
Elia Pellegrino was born in Bari on February 17, 1968, and currently resides in Andria (BT).
He is married with two children and holds a degree in Certified Accountant Programmer. He has been an ONAOO professional taster since 1997. Since 1991, Elia has served as the sole director of Azienda Olearia PELLEGRINO1890 S.r.l. (www.oliopellegrino.it). He is an agricultural entrepreneur operating a one-man business.
In 2022, he assumed the role of president of AIFO (www.associazionefrantoiani.it), succeeding in 2012 when he was elected vice president. Since 2018, he has served as vice president of OP Aproli Bari scarl (www.aproli.it) and board member of Filiera Olivicola Olearia Italiana FOOI. He has been a board member of Consorzio Olio IGP Puglia since 2021.
Margherita Chiaraviglio is from Piedmont. She owns a company called “Frantoio Fresia S.r.l.” with her son, Andrea Fresia.
It is located in Chiusavecchia, in the hinterland of Imperia. She started making olive oil after her marriage.
After her husband died, she kept making olive oil and her passion for it. Margherita took a technical course and then an advanced course from the ONAOO School.
She passed the final exam and got the qualification of Professional Taster of ONAOO in 2023.
Emanuel Andrietti was born in Ventimiglia (IM) on February 1, 1976, and holds a degree in law.
From an early age, he has been engaged in the family-owned olive oil enterprise, which was established by his father in 1945. He has come to recognize the necessity of acquiring a comprehensive understanding of the trade, given his role as the sole heir.
His father, who had him at an advanced age, remains his primary source of guidance and support at the age of 94. Approximately ten years ago, he made the decision to also enter the production side of the business. In collaboration with three colleagues, he acquired an existing olive press in Dolceacqua (IM), which had previously been utilized exclusively for third-party processing.
The press was entirely renovated and transformed into a new, continuously expanding agricultural enterprise that focuses on the cultivation and production of extra virgin olive oil made exclusively from Taggiasca olives.
In 2024, he successfully completed his training at the National Organization of Olive Oil Tasters (ONAOO), earning the title of “Professional Taster.”
Training as professional olive oil tasters is not only a personal pleasure: the universe that revolves around olive oil and its supply chain also offers a wide range of job, growth and specialization opportunities.
Participants who pass the four selective tests receive a Certificate of Physiological Suitability for Tasting.
