
Eva Collini was born in Turin, a city linked to the automotive industry.
After working fifteen years as a quality engineer, she left her career to start a project related to extra virgin olive oil. She then enrolled in ONAOO for a technical course and an advanced course, becoming a professional taster in 2023. Meanwhile, Eva started her own project, the only oil shop in Piedmont: L’EVO di Eva.
A few years later, the oleoteca grew, helping to spread oil culture. You can buy high-quality, mainly Italian oils, and you can also buy various EVO-based products (food and cosmetics), as well as books and guides about olive oil. Eva is also on the National List of olive oil technicians and expert tasters at the Brescia Chamber of Commerce.
Guy started his educational path with the technical course at ONAOO in 2021 and ended in 2024 by earning the qualification of professional taster. During this period, he further expanded his skillset by attending courses at other institutes in Italy and at the New York Olive Oil Times, obtaining certification as an olive oil sommelier.
He is the owner of “Frantoiani”, a company specialising in the selection and importation of high-quality extra virgin olive oil from various regions in Italy. The company’s product range includes approximately 20 artisanal producers and 45 labels, enabling Guy to provide advice to enthusiasts and gourmets through direct sales in his store in Mechelen, Belgium, and through his e-commerce platform. The company also supplies restaurants and wine shops with fine Italian olive oils.
Additionally, Guy is an expert in the field, regularly conducting masterclasses on extra virgin olive oil and food pairing for both private and commercial audiences, as well as culinary schools. His passion for olive oil drives him to share his knowledge and introduce people to this fascinating and flavourful world. In addition to his oil business, Guy owns a winery under the brand name “Suedtiroler” and serves as a forensic accountant.
Through my company Oliiv, I import, introduce, and sell high-quality extra virgin olive oil in Estonia, primarily through an online store and curated experiences. The website and e-shop provide the opportunity to learn more about each product and make informed purchases.
My activities include guided tastings, culinary pairings, and cultural events — from intimate gatherings at home to market events and musical evenings with olive-oil-based cocktails. The goal is always to spark curiosity and offer enjoyable and educational experiences centered on olive oil.
In a country where butter dominates the cuisine, there is great potential to show how olive oil can be part of a healthy, joyful Mediterranean lifestyle. For this reason, collaboration with chefs and cooking schools is becoming an important part of my work.
Looking ahead, I am particularly interested in engaging with the international olive oil community. Participating in global competitions — both as a taster and as a judge — is one of my aspirations. It is a valuable way to continue learning, contribute to quality standards, and bring new ideas and energy to the Estonian market.

I began my technical course at ONAOO in September 2022, building a strong foundation in extra virgin olive oil quality standards, and evaluation. In February 2023, I started the ONAOO Professional Tasting Course, further developing my sensory analysis skills and ability to assess EVOO based on official tasting methods. I completed my ONAOO course in November 2025.
Extra virgin olive oil is more than a product to me, it is a symbol of history, culture, and tradition that has been valued for thousands of years across the Mediterranean. From ancient civilizations that used olive oil for food, health, and daily life, to modern producers who preserve traditional methods while improving quality standards, olive oil has always represented purity, resilience, and connection to the land and people.
I am proud to be part of this long heritage by sourcing only exceptional EVOO and promoting oils that are authentic, fresh, and truly representative of their origin. I am committed to continuous learning and to maintaining the highest standards in quality, traceability, and transparency, so customers can experience olive oil the way it was meant to be fresh, healthy, and deeply rooted in history.
Giovanni Amoretti was born in Imperia in 1994.
He is the fourth generation of Amoretti family oil producers. He is in charge of marketing, production, and selecting oils and blends to maintain a high-quality final product.
He has been an ONAOO taster for many years because he is passionate about his work. In 2024, Giovanni received the Qualification as Professional Taster. He thinks good communication can turn a condiment into a main ingredient on our table.
