
Giovanni was born and raised in Caserta. His roots and love for his land led Giovanni to open a modern business at the foot of the Trebulani Mountains in Pontelatone (Caserta). Through path of recovery, protection, and enhancement of the most significant and ancient olive specimens, he encourages the development of marginal areas, fulfilling a remarkable biodiversity defense function.
In 2018, he enrolled in the Official Technical Course of the ONAOO School, passing the selective tests and obtaining the Certificate of Physiological Suitability. In 2019, he decided to pursue a more in-depth training path, enrolling in the Advanced Course. He passed the final exams in 2021 and obtained the ONAOO Professional Taster qualification.
He also participated in various activities organized by the School, including the ONAOO Meeting in 2020 and online tasting sessions.
Aldo holds a Bachelor of Science in Business Administration from the University of Genoa and a Master of Science in Communication and Neuro-Linguistic Programming (NLP) with certification from Dr. Richard Bandler’s NLP Society.
He has been professionally engaged in the fields of oil and quality for two decades.
In 2023 and 2024, he was included in the official list of the 110 Panel Leaders recognized by the International Olive Council (C.O.I.). Additionally, he has served as a MASAF Panel Leader in Italy since 2023, directing the Federolio 4 Panel.
He has professional experience in the industry as a master blender and quality control specialist, having worked with leading companies in Italy and abroad, including DEOLEO/CARAPELLI, SUGAT Industries LTD group, and others.
He has been a professional taster for the ONAOO since 2000, when he was included in the Panel of the CCIAA of Imperia for the certification of PDO oils. He was awarded the prestigious first prize in the National Competition organized by ONAOO, “The Taster of the Year,” and he was subsequently awarded the absolute title again in 2021.
Since 2016, he has been the driving force behind the Monte Carlo Masters of Olive Oil International Competition (MOOOIC). He has also served as a judge and panel head in numerous national and international competitions in Italy, Turkey, Israel, Tunisia, Morocco, Algeria, and South Africa.
Over the years, he has participated as a guest lecturer and lecturer in public, corporate, and university conferences in different countries, including Italy, Israel, South Africa, Turkey, Tunisia, Saudi Arabia, and others. In 2023, he published his first popular book, entitled “EVOO 99+1 Questions to Really Know Olive Oil.”
He provides business consulting and training services, organizing courses for individuals and companies in Italy and abroad in Italian and English.
Murat Faik Ünver, of Swiss and Turkish descent, was born and raised in Geneva, Switzerland. From a young age, he developed a deep interest in culinary arts and cooking. To pursue this passion, he studied Applied Sciences in Hospitality Management and Business Administration at Glion Hospitality School in Montreux.
After completing his university studies, he worked in the hospitality industry for a time, but he soon realized his true calling was to produce something from the land and engage in agriculture. To fulfill his aspirations, Murat returned to his roots in Turkey, where he planted approximately 3,000 olive trees and began cultivating his family’s land. Additionally, he acquired an abandoned olive oil factory, marking the beginning of his brand, Olivya Gökçeovacık. Since 2019, Murat and his team have been producing their own high-quality olive oil, supplying it locally to those who seek premium olive oil.
Over the years, they have garnered multiple awards, creating many moments of pride. Driven by his passion for creating and producing, Murat’s pursuit of becoming a certified olive oil sommelier will further enhance his expertise and enable him to continue excelling in his field.
Emily Lycopolus is an olive oil sommelier, professional olive oil taster, and author. She holds a degree in Life Sciences from Queen’s University, where she combined her love for science and discovery with a deep passion for food and flavors.
Additionally, she completed a master’s degree in cultural anthropology, transforming her kitchen into a space of exploration and learning. Her dedication to olive oil began in her husband’s family olive grove, an experience that marked the start of a career that now spans over 15 years. Emily has taught more than 500 culinary students and introduced numerous enthusiasts to the art of tasting and using olive oil. She is frequently consulted as an expert by retailers and food distributors for product category management, marketing strategies, and culinary pairings.
A faculty member at George Brown College, Center for Hospitality and Culinary Arts, Emily is also the author of eight cookbooks, which have earned prestigious awards such as the Gourmand and Taste Canada Awards. Her books have been presented at the Nobel House in Sweden, further solidifying her esteemed reputation in the industry.
Thanks to her expert palate, Emily shares her passion for olive oil with consumers, producers, and serves as a judge in international olive oil competitions.
In Victoria, Canada, where she lives, she organizes private workshops, advanced courses, and guided tastings with the goal of educating both culinary professionals and retail experts on how to best utilize and promote this precious ingredient.
