
I have been involved in olive growing and olive oil production since childhood as part of my family business. We own and operate one of the largest olive farms in Turkey, and I actively take part in the entire production process. My main interests are production, quality control, and sensory analysis.
I currently work as an Agricultural Engineer at our family olive farm and I am also the Chairman of the Board of our family company. My main goal is to produce and sell olives and extra virgin olive oil at the highest possible quality. I have recently registered a brand name and may move toward branding in the future. I also try to regularly practice olive oil tasting and aim to promote olive oil culture through education.
Alessandra has been studies in ONAOO since 2020. After the official technical course, which released her the Certificate of Physiological Suitability for tasting, and after the certified tasting session, she has been subscribed in the “The National Register of Technicians and Experts of Virgin and Extra Virgin Olive Oils” of Region Liguria since 2022.
In 2023, passing the exam of the 2-year advanced course, she obtained the qualification of ONAOO Professional Taster and she is in the International Register of Professional Tasters.
Through my company Oliiv, I import, introduce, and sell high-quality extra virgin olive oil in Estonia, primarily through an online store and curated experiences. The website and e-shop provide the opportunity to learn more about each product and make informed purchases.
My activities include guided tastings, culinary pairings, and cultural events — from intimate gatherings at home to market events and musical evenings with olive-oil-based cocktails. The goal is always to spark curiosity and offer enjoyable and educational experiences centered on olive oil.
In a country where butter dominates the cuisine, there is great potential to show how olive oil can be part of a healthy, joyful Mediterranean lifestyle. For this reason, collaboration with chefs and cooking schools is becoming an important part of my work.
Looking ahead, I am particularly interested in engaging with the international olive oil community. Participating in global competitions — both as a taster and as a judge — is one of my aspirations. It is a valuable way to continue learning, contribute to quality standards, and bring new ideas and energy to the Estonian market.

She began her ONAOO courses in March 2023. She completed technical, advanced, and tasting courses, earning the title of ‘Assaggiatore Professionista ONAOO’ in November 2025. Throughout this process, she was able to learn about different cultivars, which are not easy to access, experience the oil tasting procedure, and witness its contribution to high-quality olive oil production and healthy olive oil consumption. She believes that continuing the activities and tasting sessions at ONAOO will have a priceless contribution to her work as an olive oil producer.
Hilda is a certified Professional Olive Oil Taster since 2017 and a student with ONAOO since 2014.
She is a passionate home cook and baker always looking for new ways to use extra virgin olive oil in her kitchen.

I successfully completed the sensory training program at ONAOO and passed the official examination in Imperia, Italy, gaining formal qualification in olive oil sensory analysis in 2025. As olive growing and olive oil production are my profession, I wanted to further develop myself and gain deeper knowledge from one of the world’s leading institutions. My aim is to better understand olive oil, to express it correctly through sensory analysis, and to be able to communicate its true value with accuracy and confidence.
