PROFILO:

I am currently involved in projects dedicated to promoting extra virgin olive oil in the regions that represent my roots, Alto Garda and Gargano. I collaborate with local organizations, hospitality facilities, and tourism operators to introduce Italian and international visitors to the olive oil excellence of these two unique areas through guided tastings, sensory experiences, and visits to olive groves.

At the same time, I support initiatives related to the world of sailing, both on Lake Garda and in the Gargano, helping to enhance the connection between sport, nature, and gastronomic culture. The goal is to create experiences that combine territory, tradition, and quality, offering tourists and enthusiasts an authentic and engaging way to discover extra virgin olive oil and the stories behind it.

Demetris Taliotis

Demetris Taliotis is the Chief Olive Oil Obsessive at Aparthenasa, an award-winning agrocraft estate focusing on the production of terroir-driven extra virgin olive oil from Cyprus. He is a graduate of the prestigious Expert Course in Virgin Olive Oil Tasting of the University of Jaén and a jury member to numerous international olive oil competitions. His varied involvement with olive oil spans a multifarious career in agri-food and FMCG marketing, location and countryside management, and expansive research interests at the cross-sections of transversal agriculture, disruptive innovation, organoleptic variability and the cultural and creative industries.

Demetris firmly believes in the de-commodification of micro-produced olive oil, through the exploration and promotion of the variety and variability of its organoleptic profiles, in a way that enhances the sensorial pleasures consumers can relish from Extra Virgin Olive Oil.

Emanuel Andrietti

Emanuel Andrietti was born in Ventimiglia (IM) on February 1, 1976, and holds a degree in law.

From an early age, he has been engaged in the family-owned olive oil enterprise, which was established by his father in 1945. He has come to recognize the necessity of acquiring a comprehensive understanding of the trade, given his role as the sole heir.

His father, who had him at an advanced age, remains his primary source of guidance and support at the age of 94. Approximately ten years ago, he made the decision to also enter the production side of the business. In collaboration with three colleagues, he acquired an existing olive press in Dolceacqua (IM), which had previously been utilized exclusively for third-party processing.

The press was entirely renovated and transformed into a new, continuously expanding agricultural enterprise that focuses on the cultivation and production of extra virgin olive oil made exclusively from Taggiasca olives.

In 2024, he successfully completed his training at the National Organization of Olive Oil Tasters (ONAOO), earning the title of “Professional Taster.”

Michelle Ruata

Michelle, born in 1997, graduated in Business Administration in the University of Studies in Torino. In 2020 passed the selective trials at the end of the Official Technical Course for Olive Oil Tasters obtaining the Certificate of Physiological Suitability for Tasting. In 2022, after passing the advanced course’s exam, she became a Professional Taster of ONAOO. Currently she has been working in the family olive oil mill, F.lli Ruata S.p.a., in Baldissero d’Alba (Cuneo, Piedmont).

Marco Bastiani

Marco’s academic credentials—a bachelor’s degree in Economics and Banking, a Master’s degree in Family Mediation, and twenty years of work at a banking institution—did not dissuade him from pursuing a new career path in 2016.

His roots were firmly planted in his family’s olive grove in upper Tuscia (meaning the Viterbese area and generally upper Lazio). From an early age, this location represented leisure, feasting, and conviviality during the harvesting and oil production seasons.

As he matured, he embarked on a new adventure with the goal of emulating his Etruscan ancestors, the first true ambassadors of the culture of olive oil of exceptional quality. He pursued his education primarily through the large family of ONAOO and in March 2022, he graduated as a Professional Taster.

For the past three years, he has been based in Bavaria, where he runs a business offering both advisory services to specialty retailers and restaurateurs and the import and sale of high-quality extra virgin olive oil.

I joined the ONAOO family in March 2023, when I attended the official technical course, and then continued with the advanced course, which concluded in November 2025.

In the future, I would like to strengthen my connection with the ONAOO family in order to share and promote the culture and tradition of extra virgin olive oil around the world.

Participants who pass the four selective tests receive a Certificate of Physiological Suitability for Tasting.
