
Aldo holds a Bachelor of Science in Business Administration from the University of Genoa and a Master of Science in Communication and Neuro-Linguistic Programming (NLP) with certification from Dr. Richard Bandler’s NLP Society.
He has been professionally engaged in the fields of oil and quality for two decades.
In 2023 and 2024, he was included in the official list of the 110 Panel Leaders recognized by the International Olive Council (C.O.I.). Additionally, he has served as a MASAF Panel Leader in Italy since 2023, directing the Federolio 4 Panel.
He has professional experience in the industry as a master blender and quality control specialist, having worked with leading companies in Italy and abroad, including DEOLEO/CARAPELLI, SUGAT Industries LTD group, and others.
He has been a professional taster for the ONAOO since 2000, when he was included in the Panel of the CCIAA of Imperia for the certification of PDO oils. He was awarded the prestigious first prize in the National Competition organized by ONAOO, “The Taster of the Year,” and he was subsequently awarded the absolute title again in 2021.
Since 2016, he has been the driving force behind the Monte Carlo Masters of Olive Oil International Competition (MOOOIC). He has also served as a judge and panel head in numerous national and international competitions in Italy, Turkey, Israel, Tunisia, Morocco, Algeria, and South Africa.
Over the years, he has participated as a guest lecturer and lecturer in public, corporate, and university conferences in different countries, including Italy, Israel, South Africa, Turkey, Tunisia, Saudi Arabia, and others. In 2023, he published his first popular book, entitled “EVOO 99+1 Questions to Really Know Olive Oil.”
He provides business consulting and training services, organizing courses for individuals and companies in Italy and abroad in Italian and English.
David began his journey with Olive Oil in 1985 as a Chef Commis at The Four Seasons Hotel in Washington, DC, USA. After five years in hotel Food and Beverage and another six in Organic and Specialty Food retail, ending at Whole Foods Markets as Director of Grocery, he entered food manufacturing, spending ten years as an Executive for the leading organic cereal company in Vancouver, BC, Canada.
In early 2006 and for the next nine years, he was President and Partner of Lucini Italia®, based in Miami, Florida, which he grew to be the premier quality Italian Olive Oil in America. David continued his passion for EVOO by founding EVOOGuy.com(R), a consultancy. Focused 100% on best–in–class Extra Virgin Olive Oils. At the same time, launching his own EVOO brand, established a Tasting Tour using a custom-designed Olive Oil truck, lecturing, and continuing to share his knowledge via his Olive Oil 101 platform. He found a partnership with the Mediterranean Diet Round (MDR) Table in 2020, a think tank to support awareness about curated EVOOs. This included a tasting class with Yale University and 100 of their students as well as numerous tasting events in New York and Notre Dame University.

David’s first book, Extra Virgin Olive Oil—The Truth In Your Kitchen (Morgan James Publishing 2022), is available in paperback and endorsed by notable Olive Oil author, Tom Mueller, is also available as an e-book and audiobook on all the usual platforms. He has been featured on Martha Stewart, Kelly Clarkson Show, MSNBC, PBS, and many other media outlets, teaching how to taste and evaluate EVOO properly.
His participation is vast in the Olive Oil field, included many years of study at the oldest Olive Oil school in the world; O.N.A.O. O (Organizzazione Nazionale Assaggiatori Olio di Oliva) based in Imperia, Italy, an International Olive Council Accredited school. His designation as a trained Panel Taster and ONAOO Level 1 Technical Taster in 2012, as well as rising to a Professional Taster in Good Standing, 2018 – Present.
Today, David continues to use his vast knowledge in the Olive Oil world as a C-level executive for Millpress Imports / Seasons brand, based in Bethlehem, PA, and their Estate in Jaen, Spain.
Besides her management career as a Civil Engineer and Economist, Ilknur pursued her ambition to learn more about the plants and herbs of her native Turkey and their nutritional importance since 2004, gaining degrees in Agriculture and Culinary Arts.
Growing up on the Aegean coast of Anatolia amongst ancient olive groves led her become a Certified Olive Oil Sommelier and in 2019 started her educational path in the ONAOO School ended in 2022 becoming a Professional Taster.
She currently conducts masterclasses and is a consultant on the subject of the Mediterranean lifestyle, specializing in olive oil tasting and its use in cooking since she’s a Chef. She’s also a Business Consultant based in UK.
Emily Lycopolus is an olive oil sommelier, professional olive oil taster, and author. She holds a degree in Life Sciences from Queen’s University, where she combined her love for science and discovery with a deep passion for food and flavors.
Additionally, she completed a master’s degree in cultural anthropology, transforming her kitchen into a space of exploration and learning. Her dedication to olive oil began in her husband’s family olive grove, an experience that marked the start of a career that now spans over 15 years. Emily has taught more than 500 culinary students and introduced numerous enthusiasts to the art of tasting and using olive oil. She is frequently consulted as an expert by retailers and food distributors for product category management, marketing strategies, and culinary pairings.
A faculty member at George Brown College, Center for Hospitality and Culinary Arts, Emily is also the author of eight cookbooks, which have earned prestigious awards such as the Gourmand and Taste Canada Awards. Her books have been presented at the Nobel House in Sweden, further solidifying her esteemed reputation in the industry.
Thanks to her expert palate, Emily shares her passion for olive oil with consumers, producers, and serves as a judge in international olive oil competitions.
In Victoria, Canada, where she lives, she organizes private workshops, advanced courses, and guided tastings with the goal of educating both culinary professionals and retail experts on how to best utilize and promote this precious ingredient.
My journey in extra virgin olive oil began in 2018 at ESAO in Valencia, Oliveoil Times educational Lab in London 2020 and ONAOO since 2022-2025 where I finished as a professional oliveoil taster. I grew up in a restaurant and worked in restaurants in Copenhagen, Aix en Provence and New York.
Back in Denmark in 2006 I met Stig Larsen who had a delikatessen shop where he sold table olives, balsamico and extra virgin olive oil. Since I already knew a great deal about food and wine, we were a perfect match. While working as a waitress I took the wine sommelier education and finished in 2011. Then I began working with Stig, who later became my husband.
Now we have a small Market Hall on an island called Bornholm, where we sell extra virgin olive oil, parmesan, Parma ham, balsamico and also local delikatessen and run a cafe with tapas, sandwiches etc.
I work in our (my husband and I) market hall with delikatessen from Bornholm and the Mediterranean countries. We also do olive oil tastings, we have a cafe and do tapas and different events.
My introduction to the olive oil world was a breakthrough for me, since I have been searching for a field that I love and can be in for the rest of my life. I simply love this amazing community of people in the olive oil world.
