PANEL TEST
The National Organization of Olive Oil Tasters in the holder of a Professional Tasting Committee called “O.N.A.O.O.” based at the Chamber of Commerce Riviere di Liguria Imperia La Spezia Savona (Via Tommaso Schiva 29, 18100 Imperia).
This Committee was recognized by the Ministry of Agriculture – Decree N. 845 of April 26th, 2004 – and it is included in the List of Professional Tasting Committees run by MASAF (Ministry of Agriculture, Sovereignty Food and Forestry).
The Panel Test is an internationally recognized organoleptic test developed by I.O.C. (International Olive Council) and approved by the European Union (Annex XII of Regulation 2568/91 and subsequent amendments).
The Panel Group – a group of trained tasters – makes professional judgements on the product classification of virgin olive oils in accordance with current legislation.
The O.N.A.O.O. Panel is composed of: a Panel Leader – Marcello Scoccia – who coordinates the smooth running of the Committee and its performance, and a Group of Tasters enrolled in the National List of Olive Oil Technicians and Experts held by the MASAF (Ministry of Agriculture, Food Sovereignty and Forestry).
The tastings of the samples submitted to the Panel Group are carried out in special booths, using all the appropriate equipment and following precise rules.

Official Technical Course
The first step into the world of Tasting
Training as professional olive oil tasters is not only a personal pleasure: the universe that revolves around olive oil and its supply chain also offers a wide range of job, growth and specialization opportunities.
The course is open to everyone, even to those without any experience in the oil sector.
Participants who pass the four selective tests receive a Certificate of Physiological Suitability for Tasting.
